Dessert is Served...Apple Hand Pies!!

I just love making yummy easy desserts for my family.  I usually make dessert when we have an easy dinner or when I have an abundance of something.  Well, right now that abundance is Apples.  Yep, this goes with the theme right now of in season items.

I made some Apple Hand Pies earlier this week just to experiment and they turned out awesome.  So I posted it on my Facebook page just to see if there was any interest and WOW do a lot of people want this recipe.  Right now you can find yummy apples almost anywhere.  So, go find some that you love and turn them into these yummy hand pies.

Apple Hand Pies 

 I am going to start by giving a little secret of mine...I used Pillsbury Pie Crust to make these:)
3 pie crusts = 1.5 boxes

Ingredients

  • 1.5 boxes of Pillsbury Pie Crust
  • 5 medium apples, 
  • 3 Tbsp butter
  • 1/4 tsp salt
  • 1/4 cup plus 2 Tbsp white sugar
  • 3 Tbsp brown sugar
  • 2.25 tsp ground cinnamon
  • 1.5 tsp water (if needed)
  • 1 egg
  • 1 Tbsp milk
  • white sugar to sprinkle
1. Spray a baking sheet or line with parchment paper.

2. Cut and peel apples into 8 slices. Core and  peel and cut into chunks.


3. Melt butter in a large skillet over medium heat; let butter brown to a light golden color and until butter smells toasted, about 1 minute. Stir apples into hot butter; sprinkle with salt, white sugar, and brown sugar. Cook and stir apple mixture until apples are softened, about 5 minutes. Mix in cinnamon and water; continue cooking until apples are soft and sticky, 1 to 2 more minutes. Allow apple filling to cool.



4. Preheat oven to 400 degrees F (200 degrees C).

5. Lay out each pie crust and cut in half. Form each dough piece into a ball, place on a floured work surface, and roll into a circle about 8 inches in diameter.

6. Spoon 1/3 to 1/2 cup apple filling in the center. 


7. Fold dough over filling, leaving about 1 inch of dough on the bottom side visible below the top side. 
 
make sure all the filling stays in a bunch in the center!!


8. Gently press dough closed around filling, using your fingertips. 



9. Fold the overhanging bottom part of the dough up over the top edge, working your way around the crust, and pinch the overhang tightly to the top part of the crust.


10. Crimp the edge tightly closed, pinching a little bit of dough with the thumb and forefinger of one hand and using your index finger on the other hand to push a small notch into the pinched dough. Continue pinching and notching all the way around until the crust is tightly crimped together. Repeat with remaining dough and filling. Transfer pies onto prepared baking sheet.

11. Whisk egg with milk in a small bowl until thoroughly combined. Brush top of each hand pie with egg mixture and sprinkle with white sugar.

12. Cut 3 small vent holes in the top of each pie.

13. Bake in the preheated oven until pies are golden brown and filling is bubbling, 25 to 30 minutes. Let cool for at least 15 minutes before serving.

Yummy Yummy goodness!!
